Banana Oat Pancakes
Hey all, it’s T, and to start off my first blog post I wanted to share with you my new favorite breakfast for the weekend. I’ve been on a health kick in the new year, so these are a better option from your classic pancakes from a box. They’re simple, quick, and delicious. Pinterest saved me from eating another boring bowl of cheerios, and I hope you’ll enjoy them as much as I do.
All you’ll need is:
1 banana, extra ripe
½ cup quick oats
¼ cup unsweetened applesauce
1 tsp vanilla
½ tsp cinnamon
Start by mashing up the banana with a fork, add in all of your ingredients in a bowl, and stir until well combined. You could also use an electric mixer, but it’s quick enough to mix that you don’t have to get another appliance dirty. (You don’t really want to do any more dishes than necessary, right?) As an added flavor bonus, this is the part where you can add in chocolate chips, blueberries, walnuts, or whatever you usually get in your pancakes.
To cook, grease the pan or griddle, and it should be on a lower heat so the bottom doesn’t burn, and making sure it cooks all the way through, (I know this from experience and an obnoxious smoke alarm) and they cook like Mrs. Butterworth’s would for the most part. I like to use half of the batter and save the rest for the next morning, because these can get filling. For syrup, it might be best to keep to sugar free or anything with a short ingredients list if you want to stay semi-healthy with this part. Finally, you can dig in!
