Hi guys, it’s P! I apologize for my lack of activity on the blog lately, but I’ve returned with a post I think you’re all going to love; a recipe for strawberry and cream crepes! Anyone who knows me knows that I have a bit of a sweet tooth, especially in regards to anything made with strawberries. Now before making these heavenly treats, know that they can be time consuming, but are completely worth the effort. Perfect for a lazy Sunday brunch!
Strawberries, What You’ll Need…
- 3 cups of diced strawberries
- 1 cup granulated sugar
- 2 Tbsp lemon juice
- 1/2 tsp vanilla
Combine your ingredients and bring them to a boil in a large pot. Lower heat and simmer for 15 minutes, stirring occasionally
Cream, What You’ll Need…
- 2 Tbsp powdered sugar
- 2 cups whipping cream
- 1 package instant vanilla pudding
Begin by using an electric mixer on your whipping cream, high speed. Add your vanilla powder and wait until the mixture begins to thicken to add pudding powder. Continue mixing until smooth and refrigerate until you’re ready.
Crepes, What You’ll Need…
- 2 cups flour
- 4 eggs
- 1 cup milk
- 1 cup water
- 1/2 tsp salt
- 4 Tbsp melted butter
- 4 tsp sugar
In a large bowl, whisk flour and eggs together. Slowly add milk and water and mix together with an immersion blender until smooth. Add salt, butter, and sugar and continue beating.
Grease and heat pan at medium high heat. Pour 1/4 cup batter into pan and tilt until all the edges are covered and then pan is coated evenly. Cook for 1-2 minutes and flip. Cook on other side for another minute and serve hot.
The cream will simply melt when you spread it onto your crepe, while the sugary juices from the strawberries get soaked up, balancing out a perfect mix of sweet and tart flavors. After you fold your crepe, it’s up to you to have fun with it! You can use powdered sugar or chocolate syrup for added taste. If you’re like me though, you’ll just want to eat it as it is.
